可(ke)(ke)溶(rong)性(xing)淀(dian)粉(fen)(fen)是一種白(bai)色(se)或類白(bai)色(se)粉(fen)(fen)末,無臭無味(wei),不溶(rong)于冷水,在熱水中則可(ke)(ke)成(cheng)為透明溶(rong)液(ye),冷卻后(hou)不結冰,一般用大米、玉米、小米、土(tu)豆的淀(dian)粉(fen)(fen)都可(ke)(ke)制成(cheng)可(ke)(ke)溶(rong)性(xing)淀(dian)粉(fen)(fen),但以紅薯淀(dian)粉(fen)(fen)制得的可(ke)(ke)溶(rong)性(xing)淀(dian)粉(fen)(fen)。紅薯淀(dian)粉(fen)的(de)(de)顆粒較粗(cu),外面所包的(de)(de)膠(jiao)膜在進行水解時易破裂,容易干燥(zao)。其加工過程是(shi):取一定量的(de)(de)紅薯淀(dian)粉(fen)過80目細(xi)(xi)篩,置于一大(da)缸(gang)(gang)中,加入8%-9%的(de)(de)鹽酸,將溶液攪(jiao)成薄(bo)糊狀,于40-45攝氏度浸漬(zi)24小時,或(huo)在室(shi)溫(wen)下放置6-7天(tian)也(ye)可。每隔(ge)2小時攪(jiao)動一次(ci),浸漬(zi)完畢后,用虹吸(xi)法將缸(gang)(gang)內上層清液排掉,然(ran)后水洗數次(ci),同時不斷(duan)攪(jiao)動,直至(zhi)不含氯離(li)子為(wei)止(zhi)。然(ran)后掉包脫水干燥(zao),最(zui)后用石磨(mo)磨(mo)細(xi)(xi)通(tong)過100-120目篩孔(kong),即為(wei)可溶性淀(dian)粉(fen)。
